Home Made Sweet Potato "puffs"

Puffs

Emerson is 11 months old and he just loves to feed himself. I'm always looking for yummy healthy things to give him to snack on in his high chair while I'm bustling around the kitchen or something I can bring on the go. I came across a few homemade puffs recipes and I decided to create one of my own using my sons two favorite foods: sweet potato and banana. They were so yummy even I had a few!

  • 1 very large organic sweet potato or 2 medium ones
  • 1 banana
  • 1 cup of coconut flour (or flour of your choice)
  • 1/2 cup ground flax seeds
  • 3tbs coconut oil
  • 3 tbs coconut milk ( or another milk or water)
  • 2 tbs date puree - you can follow my recipe here. (optional)
  • Cinnamon to taste (optional)

Preheat your oven to 350. To get the sweetest flavor out of your sweet potato and banana you have to bake them. The sweet potato should be done in 45 min- 1hr depending on the size and banana could be baked for about 20 min. When it's all done throw everything in a food processor or blender and mix it till it's nice and smooth. You can use a zip lock bag with the corner snipped off or a pastry bag to pipe little "puffs" on a baking sheet (I used this one). Bake for 15 min and store in the fridge. They stay fresh for about a week.

EDIT: These puffs won't bake like a traditional cookie or even a store bought puff, but will have a slightly mushy/chewy texture once bitten into.

Was going to wait to post a pic of these babies when I had them properly styled and when I had a minute to break out my real camera and not just the iPhone buuuttttt screw it! I’m obsessed! Typically I err on the safe side with things that are more permanent around my home. I’ll go wild with pillows and paint but when it comes to investing in upholstery and more expensive pieces of furniture I like to pick things that I feel I won’t get sick of. But these beauties might have just made me a risk taker for life. If you’ve been following me for some time these are the same yellow chairs I scored when a neighbor was moving out and just left these on the curb! 😱 They were in decent shape. The frame was great but the fabric was torn in places and very faded. Anyway, I knew I could give them a new life but it took a while for me to decide what to do. I’m so glad I picked this Braemore Jamil leopard. It’s literally giving this place life!! Anyway, long winded way of saying TAKE SOME RISKS it’s worth it! And in the end it’s really just furniture anyway, so who cares! (Swipe to see the before) .

This chair 😍. Remember when I scored these babies via Facebook? (Sidewalk trash is sorta my thing 😏). I literally had no idea where these (I have two) would go. But the caning and the rounded shape was just too good to pass up! Anyway the wood was in great shape, caning also perfect. All it needed was a new cushion covers. What’s great is that both cushions come off the chair. So it’s just a matter of making new ones for seasonal changes or whenever my fickle little heart needs a change. 🙈 swipe to see the before! .

Everyone on IG is “tidying up” and doing Konmari on every crevice if their home and I’m completely guilty of this as well! No matter how “basic” it’s become, there is such an overwhelming sense of calm I feel when things are in order, and there is no clutter, even in places I don’t see everyday (like the garage!). I’m also a bit of an organization junkie. It’s hard to keep on top of it, but I get such a thrill out of planning out an organization strategy, even if it’s as small as a spice rack (which I did this weekend as well 🤣🙈). I plan to tackle our junk closet this weekend. Crossing my fingers it’s a quick one!! .

So happy to finally have the perfect dresser for this kids room. Patience is not my strongest quality, but since owning a home, I’ve learned that waiting for that perfect piece is so worth it.

Starting the new year by adding some patterns to our living room. I’m a big believer in leopard being a neutral. It pretty much goes with everything! In the right pattern and the right coloration it’s just 👌🏼. I ordered leopard yardage to have those mustard chairs reupholstered in. Unfortunately the in stock date has been pushed back 3 times now 🙄. But they are torn and in pretty rough shape so I’m excited to give them a fresh look. But for now these pillow will have to do ❤️

Spent the last few days of 2018 purging, re-organizing, and shuffling furniture and pillows around in an effort for a fresh look/start on the year.  I moved this chair that was in my youngest boys room to my dressing room. I nursed both my boys in this chair. Read them stories, and rocked them to sleep. I cried in this chair as a new mom scared to death that I wouldn’t be up to the job. This chair is the one thing in my house that holds the most sentimental value to me. It’s big and cumbersome. And it just didn’t work in either of the boys rooms anymore. I tried it in the master for a bit but it was just too big for the corner. My poor husband couldn’t walk around from his side without walking into it 🤣🙈. Anyway it somehow works here. And it makes me smile every time I look at it. ❤️. So happy 2019 to you all. May you make room in your life for fresh and new. De-cluttering your space, heads and hearts. And hold on you the things you treasure most! .
